A delightful blend of succulent chicken in a creamy sun-dried tomato sauce, perfect for date nights or family dinners.

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes, oil-packed
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper generously.
  2. Heat the olive oil in a large, oven-safe skillet over medium-high heat.
  3. Sear the chicken for about 5 minutes on each side until golden brown.
  4. Add the minced garlic and sun-dried tomatoes, stirring for about a minute until the garlic becomes fragrant.
  5. Pour in the heavy cream and chicken broth, then stir in the Italian seasoning. Allow it to simmer until slightly thickened.
  6. Fold in the fresh spinach, then sprinkle the grated Parmesan cheese over the dish, letting it melt into the sauce.
  7. Transfer the skillet to the oven. Bake for approximately 20 minutes, or until the chicken reaches an internal temperature of 165°F.

Notes

For added depth, consider adding a splash of white wine while simmering the sauce. You can substitute sun-dried tomatoes with roasted red peppers.
