Ingredients
Scale
4 boneless, skinless chicken breasts
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
2 cloves garlic, minced
1/2 cup sun-dried tomatoes, oil-packed, drained
1/4 cup chopped fresh basil
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional)
Instructions
Prep the Chicken: Start by patting the chicken breasts dry with paper towels for a perfect sear.
Season: In a small bowl, mix together the salt, pepper, garlic powder, and paprika. Rub this mixture all over the chicken breasts for enhanced flavor.
Sear the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5-7 minutes on each side until golden brown. Once done, set the chicken aside.
Sauté Garlic: In the same skillet, add the remaining 2 tablespoons of olive oil. When it’s hot, sauté the minced garlic for about 30 seconds until fragrant.
Add Tomatoes and Basil: Stir in the sun-dried tomatoes and chopped basil, and cook for another minute. The aroma will be mesmerizing!
Deglaze the Pan: Pour in the chicken broth, bringing it to a simmer while scraping up any browned bits from the skillet.
Create the Sauce: Lower the heat and stir in the heavy cream, grated Parmesan cheese, and optional red pepper flakes. Let it simmer for 5-7 minutes until the sauce thickens.
Combine Chicken and Sauce: Return the chicken to the skillet, covering it with the sauce. Simmer everything for another 2-3 minutes to meld the flavors together.
Serve: Enjoy the dish over pasta, rice, or with a side of crusty bread. Garnish with extra basil and Parmesan!
Notes
Let the chicken rest after searing for better moisture retention. Fresh ingredients enhance flavor.
