  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1/4 cup chopped fresh basil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep the Chicken: Start by patting the chicken breasts dry with paper towels for a perfect sear.
  2. Season: In a small bowl, mix together the salt, pepper, garlic powder, and paprika. Rub this mixture all over the chicken breasts for enhanced flavor.
  3. Sear the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5-7 minutes on each side until golden brown. Once done, set the chicken aside.
  4. Sauté Garlic: In the same skillet, add the remaining 2 tablespoons of olive oil. When it’s hot, sauté the minced garlic for about 30 seconds until fragrant.
  5. Add Tomatoes and Basil: Stir in the sun-dried tomatoes and chopped basil, and cook for another minute. The aroma will be mesmerizing!
  6. Deglaze the Pan: Pour in the chicken broth, bringing it to a simmer while scraping up any browned bits from the skillet.
  7. Create the Sauce: Lower the heat and stir in the heavy cream, grated Parmesan cheese, and optional red pepper flakes. Let it simmer for 5-7 minutes until the sauce thickens.
  8. Combine Chicken and Sauce: Return the chicken to the skillet, covering it with the sauce. Simmer everything for another 2-3 minutes to meld the flavors together.
  9. Serve: Enjoy the dish over pasta, rice, or with a side of crusty bread. Garnish with extra basil and Parmesan!
