A one-skillet wonder featuring tender chicken breasts in a creamy sauce with sun-dried tomatoes, perfect for weeknight dinners or special occasions.

  • 2 lbs boneless, skinless chicken breasts
  • 1 ⅓ tablespoons olive oil
  • Salt and black pepper (to taste)
  • 1 cup chicken broth
  • 2/3 cup heavy cream (at room temperature)
  • 1/4 cup fresh grated parmesan cheese (at room temperature)
  • 2 teaspoons minced garlic
  • 2/3 cup sun-dried tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 375°F and position the skillet in the center.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Heat the olive oil in a skillet over medium-high heat.
  4. Sear the chicken until golden, about 3-4 minutes per side, then transfer to a plate.
  5. In the same skillet, sauté the minced garlic for about 1 minute until fragrant.
  6. Add chicken broth and let it cool slightly.
  7. Stir in the heavy cream, parmesan, sun-dried tomatoes, oregano, and red pepper flakes.
  8. Bring the mixture to a simmer.
  9. Once simmering, return the chicken to the skillet, ensuring it’s well-coated with the sauce.
  10. Place the skillet in the preheated oven and bake for 12-15 minutes until the chicken reaches an internal temperature of 160°F.
  11. Let the chicken rest for 5 minutes before serving with the sauce.

Notes

For an even juicier cut, swap chicken breasts for thighs. This dish can be made ahead of time by preparing it up to the baking step.
