A delightful dish with creamy sauce, sun-dried tomatoes, and tender chicken that’s perfect for a date night or family dinner.

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 ⅓ tablespoons olive oil
  • Salt and black pepper (to taste)
  • 1 cup chicken broth
  • 2/3 cup heavy cream (at room temperature)
  • 1/4 cup fresh grated parmesan cheese (at room temperature)
  • 2 teaspoons minced garlic
  • 2/3 cup sun-dried tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 375°F and place an oven-safe skillet in the center.
  2. Generously season the chicken breasts with salt and pepper.
  3. In the preheated skillet with olive oil, sear the chicken for about 3-4 minutes on each side until golden brown. Then, remove the chicken and set aside.
  4. In the same skillet, sauté the minced garlic for about a minute until fragrant.
  5. Add the chicken broth and allow it to cool slightly before mixing in the heavy cream, parmesan cheese, sun-dried tomatoes, oregano, and red pepper flakes. Bring this mixture to a gentle simmer.
  6. Return the seared chicken to the skillet, ensuring it’s well-coated in the rich sauce.
  7. Transfer the skillet to the oven and bake for 12-15 minutes, or until the chicken reaches an internal temperature of 160°F.
  8. Allow the chicken to rest for 5 minutes before serving, generously drizzling the creamy sauce over the top.

Notes

Serve with garlic bread or rice to soak up the sauce. Pairs well with a light white wine.
