An indulgent dish combining tender chicken breasts with sun-dried tomatoes and spinach in a creamy sauce, perfect for romantic dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Parmesan cheese for garnish

Instructions

  1. Season both sides of the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken to the skillet and cook for 6-7 minutes on each side until golden brown and fully cooked.
  4. Remove the chicken from the skillet and set aside.
  5. Add minced garlic to the same skillet and sauté for about a minute until fragrant.
  6. Pour in the chicken broth and bring to a gentle simmer.
  7. Add the heavy cream, sun-dried tomatoes, spinach, and Italian seasoning, then stir until well combined.
  8. Return the chicken to the skillet and simmer for about 5 minutes, or until the sauce thickens.
  9. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Can substitute kale for spinach or use a plant-based alternative for heavy cream.
