A creamy chicken dish bursting with flavors from sun-dried tomatoes and Parmesan, ideal for special occasions.

Ingredients

  • 4 chicken breasts
  • 1 cup sun-dried tomatoes in oil, drained
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat a splash of olive oil in a large skillet over medium heat.
  2. Sauté the minced garlic until it’s wonderfully fragrant.
  3. Season the chicken breasts with salt and pepper. Add them to the skillet and brown on both sides, approximately 4-5 minutes each side.
  4. Remove the chicken from the skillet and set aside.
  5. Pour in the chicken broth, using a spatula to scrape the bottom and deglaze the pan.
  6. Stir in the sun-dried tomatoes, heavy cream, and Italian seasoning. Bring everything to a gentle simmer and mix in the Parmesan cheese until it melds into the sauce beautifully.
  7. Return the browned chicken breasts back to the skillet. Cover and cook for about 20 minutes, or until the chicken is fully cooked and tender.
  8. Adorn your dish with fresh basil for a fragrant finishing touch before serving.

Notes

For a lighter version, substitute heavy cream with a blend of half-and-half and flour to thicken. Add spinach or artichokes for extra veggies.
