  • 1 cup parmesan cheese, grated
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Add the chicken to the skillet; cook until browned, approximately 5-7 minutes per side. Remove and set aside.
  4. Sauté minced garlic in the same skillet for about 30 seconds until fragrant.
  5. Pour in heavy cream and add grated parmesan, stirring until smooth.
  6. Incorporate fresh spinach, allowing it to wilt in the sauce.
  7. Return chicken to the skillet, spooning sauce over the top.
  8. Let everything simmer for about 5-10 minutes until chicken is cooked through.
  9. Garnish with fresh basil before serving.

For extra flavor, brine the chicken breasts for 30 minutes beforehand. Consider using half-and-half or a dairy-free cream alternative for a lighter option.
