A creamy, savory chicken dish with sun-dried tomatoes and Parmesan cheese, perfect for impressing loved ones.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Generously season the chicken breasts with salt and pepper on both sides.
  3. Heat the olive oil in a large skillet over medium heat. Sear the chicken for about 5-7 minutes on each side until golden brown. Once done, remove the chicken and set aside.
  4. In the same skillet, pour in the chicken broth, heavy cream, sun-dried tomatoes, garlic powder, and Italian seasoning. Stir the mixture until well combined.
  5. Return the chicken to the skillet and spoon some of the sauce over it.
  6. Sprinkle the Parmesan cheese atop the chicken for that delicious, melty finish.
  7. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is thoroughly cooked through.
  8. Garnish with fresh basil before serving.

Notes

For a richer flavor, marinate the chicken for at least 30 minutes before cooking. Rotisserie chicken can be used to save time.
