  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 cup chicken stock
  • 1 cup heavy cream
  • ¼ cup white wine
  • ½ cup Parmesan cheese (grated)
  • 1 teaspoon chili flakes
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 cup sun-dried tomatoes (chopped)
  • ¼ cup fresh basil leaves
  • Pasta (to serve, optional)

Instructions

  1. Prepare the Chicken: Begin by placing chicken breasts between plastic wrap. Pound them to about ½-inch thickness. Season with salt and pepper, then lightly coat with flour.
  2. Sear the Chicken: In a large skillet over medium-high heat, heat olive oil and butter. Sear each side of the chicken for 4-5 minutes until golden brown. Set aside.
  3. Make the Sauce: In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add chili flakes, oregano, and thyme; cook while mixing in the sun-dried tomatoes for 1-2 minutes.
  4. Create Creamy Goodness: Pour in the chicken stock and white wine, scraping up browned bits from the bottom. Stir in the heavy cream and Parmesan cheese, simmer for 2-3 minutes until slightly thickened.
  5. Combine and Simmer: Return the chicken to the skillet, cover, and simmer for 10-15 minutes to meld flavors.
  6. Finish with Freshness: Just before serving, fold in fresh basil. Serve over optional pasta.

Notes

For a lighter version, swap heavy cream for half-and-half. For gluten-free, use cornstarch instead of flour.
