A magical one-pan dish featuring boneless chicken breasts in a creamy sauce with sun-dried tomatoes and spinach, perfect for any occasion.

Ingredients

  • 4 boneless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 1 cup spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for garnish

Instructions

  1. Season the chicken: Sprinkle salt, pepper, and Italian seasoning on both sides of the chicken breasts.
  2. Brown the chicken: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Sauté garlic: In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Combine liquids: Pour in chicken broth and heavy cream, stirring well to mix everything.
  5. Add flavor: Toss in the sun-dried tomatoes and spinach, then return the chicken to the skillet.
  6. Simmer: Let everything simmer for around 20 minutes, or until the chicken is thoroughly cooked and tender.
  7. Serve: Plate the chicken, drizzling the creamy sauce over the top.
  8. Garnish: Finish off with freshly grated Parmesan cheese before serving.

Notes

Feel free to substitute spinach with another leafy green or use fresh tomatoes instead of sun-dried if preferred. Serve over pasta or with crusty bread.
