  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season both sides of the chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown, about 5-7 minutes per side.
  3. Once cooked, remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and minced garlic. Sauté until soft and fragrant.
  5. Stir in the diced tomatoes along with the Italian seasoning.
  6. Pour in the heavy cream and mix to combine all ingredients well.
  7. Return the chicken to the skillet. Cover and let it simmer for 10-15 minutes, or until the chicken is fully cooked through.
  8. Before serving, garnish with fresh basil for an added touch of flavor and freshness.
