A romantic dish with tender chicken breasts in a creamy sauce with sun-dried tomatoes and Parmesan cheese, perfect for special occasions or family dinners.

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper (to taste)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (chopped)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp red pepper flakes (optional)
  • Fresh basil or parsley (chopped, for garnish)

Instructions

  1. Season the chicken: Season both sides of the chicken breasts with garlic powder, onion powder, salt, and pepper.
  2. Sear the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 4-5 minutes on each side until they turn golden brown. Remove the chicken from the skillet and set aside.
  3. Prepare the sauce: Lower the heat to medium. Pour in the chicken broth while scraping up any browned bits from the skillet.
  4. Create the creamy mixture: Stir in the heavy cream, grated Parmesan, chopped sun-dried tomatoes, oregano, thyme, and optional red pepper flakes. Let this sauce cook for 3-4 minutes until it thickens slightly.
  5. Combine and simmer: Return the seared chicken breasts to the skillet. Spoon the sauce over them, cover, and simmer for 8-10 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. Garnish and serve: Remove from heat, and garnish with fresh basil or parsley before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half or Greek yogurt. Try serving over pasta, rice, or mashed potatoes.
