A creamy and flavorful chicken dish with sun-dried tomatoes and Italian herbs that makes every dinner feel extraordinary.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Season the chicken by generously using salt, pepper, garlic powder, and Italian seasoning on both sides.
  2. Brown the chicken in olive oil over medium-high heat for 6-7 minutes per side until golden brown; remove from skillet.
  3. Make the sauce by adding chicken broth and heavy cream to the same skillet, then stir in sun-dried tomatoes and spinach until simmering.
  4. Cook the chicken in the sauce for 10-15 minutes, covering the pan, until the chicken is cooked through.
  5. Add Parmesan cheese gently until melted into the sauce.
  6. Serve hot, garnished with fresh basil.

Notes

For a lighter option, swap heavy cream for half-and-half or coconut cream. Store leftovers in an airtight container for up to 3 days or freeze for 3 months.
