A romantic and comforting one-pan chicken dish simmered in a creamy sun-dried tomato sauce, perfect for any occasion.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes (in oil, drained and chopped)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Season both sides of the chicken breasts generously with salt, pepper, and garlic powder.
  3. Sear the chicken in the skillet for about 6-7 minutes, or until golden brown. Flip and cook for an additional 6-7 minutes until fully cooked through.
  4. Remove the chicken and set it aside on a plate to rest.
  5. Add the chopped sun-dried tomatoes, chicken broth, and heavy cream to the same skillet. Stir everything together.
  6. Bring the sauce to a gentle simmer, reduce the heat to low, and return the chicken to the skillet.
  7. Sprinkle the Italian seasoning over the chicken and let the mixture simmer together for about 5 minutes.
  8. Serve your chicken on plates and garnish with fresh basil if desired.

Notes

Feel free to adjust seasoning to taste; you can add a pinch of red pepper flakes for a bit of heat. Letting the chicken rest after cooking ensures it stays juicy.
