A romantic dish featuring juicy chicken breasts in a creamy sauce with sun-dried tomatoes and spinach.

Ingredients

  • 4 chicken breasts
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for garnish

Instructions

  1. Heat a bit of oil over medium heat in a large skillet.
  2. Season the chicken breasts generously with salt and pepper.
  3. Cook each side until browned, around 5-7 minutes.
  4. Remove the chicken and set aside.
  5. Add the minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  6. Pour in the chopped sun-dried tomatoes, chicken broth, and heavy cream.
  7. Stir to combine and bring to a gentle simmer.
  8. Return the chicken to the skillet.
  9. Add the chopped spinach and sprinkle in the Italian seasoning.
  10. Allow everything to cook together for an additional 10-15 minutes until the chicken is fully cooked and the sauce thickens slightly.
  11. Serve hot, garnished with Parmesan cheese.

Notes

For a lighter option, substitute heavy cream with coconut milk or a low-fat alternative.
