  • 3 pounds boneless skinless chicken breasts
  • Salt and freshly cracked black pepper (to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped garlic
  • ¾ cup low-sodium chicken stock
  • ½ cup heavy cream (brought to room temperature)
  • ½ cup freshly grated Parmesan cheese (room temperature)
  • 1 cup sun-dried tomatoes (oil-packed preferred)
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • Fresh basil (for garnish, optional)
  • Extra grated Parmesan (for garnish, optional)

Instructions

  1. Season both sides of the chicken breasts with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for about 6-7 minutes per side until golden brown and fully cooked.
  4. Remove the chicken and set it aside.
  5. Add the chopped garlic to the same skillet and sauté for about 30 seconds until fragrant.
  6. Pour in the chicken stock, scraping any browned bits from the pan.
  7. Stir in the heavy cream, sun-dried tomatoes, grated Parmesan, dried oregano, and optional red pepper flakes.
  8. Allow the sauce to simmer and thicken for about 3-5 minutes.
  9. Return the chicken to the skillet, spooning the sauce over the top and letting it cook for another 2-3 minutes.
  10. Serve hot, garnished with fresh basil and additional Parmesan if desired.

Notes

For a perfectly cooked chicken, consider flattening the breasts slightly. Room-temperature dairy helps create a smooth sauce without curdling.
