A love story on a plate featuring perfectly seared chicken breasts in a rich, creamy sauce with sun-dried tomatoes and fresh basil.

Ingredients

  • 4 boneless, skinless chicken breasts (about 11.5 lb total)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning (or a pinch each of dried oregano, basil, thyme)
  • 1 cup heavy cream (or half-and-half for a lighter sauce)
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped, plus extra for garnish

Instructions

  1. Pat the chicken dry and season it generously with salt, pepper, and Italian seasoning.
  2. Heat a large skillet over medium-high heat and add the olive oil.
  3. Once the oil is shimmering, sear the chicken for about 5–7 minutes on each side until it turns golden brown.
  4. After cooking, remove the chicken from the skillet and tent it with foil to keep warm. Reduce the heat to medium.
  5. In the same skillet, pour in the heavy cream and scrape up any brown bits from the bottom.
  6. Stir in the freshly grated Parmesan until the sauce is smooth and creamy.
  7. Mix in the chopped sun-dried tomatoes and basil.
  8. Return the chicken to the skillet and allow it to simmer in the sauce for about 3–5 minutes.
  9. Serve immediately, spooning the creamy sauce over the chicken and garnishing with extra basil and Parmesan.

Notes

Pair with rice or mashed potatoes for an elevated dining experience. A glass of Pinot Grigio complements the meal perfectly.
