A comforting yet impressive dish with tender chicken breasts in a creamy sauce, enhanced by sun-dried tomatoes.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts with salt, pepper, and Italian seasoning.
  4. Add the chicken to the skillet and sear each side for about 3–4 minutes until golden brown.
  5. Remove the chicken and set it aside.
  6. In the same skillet, add the minced garlic and chopped sun-dried tomatoes; sauté for 1–2 minutes.
  7. Pour in the chicken broth and heavy cream, stirring to combine.
  8. Return the chicken to the skillet, ensuring it’s nicely coated with the sauce.
  9. Bring the sauce to a simmer, then transfer the skillet to the oven.
  10. Bake for 25–30 minutes until the chicken is cooked through.
  11. Garnish with fresh basil before serving.

Notes

For a dairy-free option, swap heavy cream for coconut cream.
