  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic (minced)
  • 1 cup chicken stock
  • 1 cup heavy cream
  • ½ cup parmesan cheese (grated)
  • 1 teaspoon chili flakes
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • ⅓ cup sundried tomatoes (chopped)
  • 1 tablespoon fresh basil leaves

Instructions

  1. Prep the chicken: Season the chicken cutlets with salt and black pepper. Dredge them in flour so that both sides are evenly coated.
  2. Sear the chicken: In a large skillet over medium heat, melt the olive oil and butter. Once hot, add the chicken cutlets and cook for 4-5 minutes on each side until golden brown. Remove the chicken and set it aside.
  3. Sauté the garlic: Using the same skillet, add the minced garlic and sauté for about 1 minute until it becomes fragrant.
  4. Make the sauce: Pour in the chicken stock, then stir in the heavy cream. Bring this delicious mixture to a gentle simmer.
  5. Add the flavor: Sprinkle in the grated parmesan cheese, chili flakes, oregano, thyme, and sundried tomatoes. Stir well until the cheese melts and the sauce thickens beautifully.
  6. Return the chicken: Add the seared chicken back into the skillet, allowing it to simmer in the creamy sauce for an additional 5 minutes.
  7. Finish with fresh herbs: Just before serving, garnish your dish with fresh basil leaves for a burst of color and flavor.

Notes

For a dairy-free version, substitute heavy cream with half-and-half or plant-based cream. Feel free to add fresh herbs or vegetables for more flavor.
