  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 1/2 teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup all-purpose flour
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon tomato paste
  • 1/2 cup oil-packed sun-dried tomatoes, drained and sliced
  • 3/4 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 2/3 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 12 tablespoons chopped fresh basil or parsley, for garnish
  • Cooked pasta, mashed potatoes, rice, or bread for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry and season them with 1 teaspoon of salt, 1/2 teaspoon of black pepper, garlic powder, and onion powder. Dredge the chicken in flour until coated, then set aside.
  3. Heat olive oil and butter in a large skillet over medium heat. Sear the chicken for about 5-7 minutes on each side until golden brown, then remove the chicken from the skillet.
  4. Add minced garlic and crushed red pepper flakes to the same skillet; sauté for about 1 minute until fragrant. Stir in the tomato paste and sun-dried tomatoes, deglazing the skillet with chicken broth.
  5. Lower the heat and whisk in the heavy cream, Italian seasoning, thyme, and Parmesan cheese until well combined.
  6. Nestle the chicken back into the sauce, transfer the skillet to the oven, and bake for 20 minutes or until the chicken is cooked through.
  7. Let the chicken rest for a few minutes, garnish with fresh herbs, and serve with your choice of sides.

Notes

For lighter options, swap heavy cream with half-and-half or a non-dairy alternative. Consider adding spinach or roasted red peppers for variations.
