A delightful chicken dish simmered in a creamy sauce with sun-dried tomatoes and garlic, perfect for impressing guests or enjoying a cozy dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Generously season both sides of the chicken breasts with salt and pepper.
  2. In a large skillet, heat some olive oil over medium heat. Add the chicken breasts once the oil is hot.
  3. Sear the chicken until golden brown, about 5 to 7 minutes on each side.
  4. Remove the chicken from the skillet and place on a plate.
  5. In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
  6. Toss in the chopped sun-dried tomatoes, then pour in the chicken broth and heavy cream. Stir until well combined.
  7. Bring the mixture to a gentle simmer, then stir in the grated Parmesan cheese and Italian seasoning. Continue stirring until the cheese melts and the sauce is smooth.
  8. Return the chicken to the skillet, allowing it to simmer in the sauce for an additional 5 to 10 minutes until fully cooked and the sauce thickens.
  9. Garnish with fresh basil before serving.

Notes

For a healthier option, substitute heavy cream with half-and-half. Tweak flavors by adding mushrooms or red pepper flakes for heat.
