A comforting dish featuring tender chicken thighs in a creamy garlic sauce with fresh spinach, perfect for weeknight dinners or special occasions.

  • 4 chicken thighs
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil
  • Mashed potatoes or rice for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until both sides are browned and golden, about 5 minutes per side.
  3. Remove the chicken from the skillet and set it aside to rest.
  4. In the same skillet, add minced garlic and sauté until fragrant, approximately 30 seconds.
  5. Pour in heavy cream, chicken broth, and Italian seasoning. Stir to blend well, allowing the mixture to come to a gentle simmer.
  6. Return the browned chicken to the skillet and let it simmer until fully cooked, about 10 more minutes.
  7. Stir in fresh spinach and allow it to wilt, which should take just a minute.
  8. Serve the creamy chicken generously over mashed potatoes or rice.

Notes

For a lighter version, swap heavy cream for a dairy-free alternative and chicken thighs for chicken breasts if preferred. Garnish with parsley or parmesan for extra flavor.
