A delightful dish featuring tender chicken in a rich, creamy sauce with sun-dried tomatoes and Parmesan. Perfect for romantic dinners or family gatherings.

  • 4 pieces boneless, skinless chicken breasts (about 11.5 lb total)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped, plus extra for garnish

Instructions

  1. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  2. Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken and cook until golden brown on each side, about 3-4 minutes per side. Once browned, remove and set aside.
  3. Pour in the heavy cream and let it come to a gentle simmer. Stir in the grated Parmesan cheese until the mixture melts and becomes creamy.
  4. Add the chopped sun-dried tomatoes and return the chicken to the skillet. Let everything simmer together for about 5 minutes to allow the sauce to thicken and envelop the chicken in delightful flavors.
  5. Remove the pan from the heat, stir in the fresh basil, and garnish with additional basil before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat, adding a splash of cream if the sauce thickens too much.
