A creamy, delicious dish featuring tender chicken, sun-dried tomatoes, and Parmesan cheese, perfect for romantic dinners or family meals.

  • 4 small boneless, skinless chicken breasts (or 2 large breasts sliced horizontally)
  • 1½ teaspoons kosher salt
  • ¼ cup all-purpose flour
  • 2 tablespoons olive oil
  • 34 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese, divided
  • 1 (7-ounce) jar sun-dried tomatoes, drained and chopped (about ½ cup)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ¼ cup fresh basil leaves, thinly sliced
  • Cooked pasta or mashed potatoes

Instructions

  1. Season the chicken breasts with kosher salt and dredge them in flour, shaking off any excess.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown, then transfer to a plate.
  3. Add the minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth, scraping up any browned bits from the pan. Stir in the heavy cream, ¼ cup Parmesan, sun-dried tomatoes, Italian seasoning, black pepper, and red pepper flakes.
  5. Return the chicken to the skillet and let it simmer. Reduce heat to medium-low and cook until the chicken reaches an internal temperature of 165°F (74°C), about 5-8 minutes.
  6. Finish by sprinkling the remaining Parmesan and fresh basil on top. Serve hot over cooked pasta or creamy mashed potatoes.

Notes

For added flavor, brine the chicken before cooking and let it rest after cooking.
