A rich, creamy chicken dish featuring a delightful blend of Parmesan and cherry tomatoes, perfect for weeknight dinners and special occasions.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon pesto
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Generously season the chicken breasts with salt, pepper, and garlic powder.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts to the skillet, searing until golden brown—approximately 4-5 minutes per side.
  5. Once browned, remove the chicken from the skillet and set aside.
  6. In the same skillet, toss in the halved cherry tomatoes, cooking until they start to soften.
  7. Pour in heavy cream, stirring in grated Parmesan and pesto until fully combined.
  8. Return the seared chicken to the skillet, ensuring it’s coated with that rich sauce.
  9. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  10. Garnish with fresh basil before serving.

Notes

Searing the chicken properly is key for maximum flavor. Store leftovers in an airtight container for up to 3 days.
