  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Marsala wine
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Heat olive oil in a large skillet over medium-high heat and brown the chicken for about 5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. Add sliced mushrooms and cook until they’re softened, around 3-4 minutes.
  6. Combine minced garlic and sauté for about 1 minute until fragrant.
  7. Pour in heavy cream and Marsala wine, stirring well to combine all the ingredients.
  8. Mix in dried oregano, thyme, and Parmesan cheese, ensuring everything is well incorporated.
  9. Return the chicken to the skillet, making sure each piece is well-coated with the sauce.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and juices run clear.
  11. Garnish with chopped parsley before serving for an appealing touch.

Notes

For extra depth of flavor, consider marinating the chicken in the seasoning for a couple of hours before cooking. Don’t rush the browning step; achieving a nice golden color enhances the dish’s overall flavor.
