A creamy, savory dish featuring seared chicken and sun-dried tomatoes, perfect for date night or a comforting weeknight dinner.

Ingredients

  • 2 lbs chicken breast (sliced into ½-inch thick fillets)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 oz sun-dried tomatoes (soaked in hot water for 30 minutes and chopped)
  • 1 tsp sea salt
  • ½ tsp ground pepper
  • 4 garlic cloves (minced)
  • ½ tsp dry thyme
  • ½ tsp dry oregano
  • ½ tsp red pepper flakes
  • 2 cups heavy cream
  • 1 cup shredded parmesan cheese
  • A handful of fresh basil

Instructions

  1. Heat a tablespoon of olive oil in a heavy-bottom skillet over medium heat. Season the chicken fillets with sea salt.
  2. Sear the chicken for 3-4 minutes on each side until it’s fully cooked yet juicy. Remove the chicken and keep it warm on a plate covered with foil.
  3. In the same skillet, add the butter, reducing the heat to low. Sauté the minced garlic and chopped sun-dried tomatoes for about 2 minutes, or until fragrant.
  4. Pour in the heavy cream, and stir in the dry thyme, dry oregano, red pepper flakes, and ground pepper. Let it simmer for around 5 minutes to meld the flavors.
  5. Return the cooked chicken to the skillet and let everything simmer together for another 7-8 minutes, allowing the chicken to absorb the creamy goodness.
  6. Fold in the shredded parmesan cheese and fresh basil, stirring until the cheese melts and the sauce becomes creamy and velvety.
  7. Serve warm over fresh pasta or alongside velvety mashed potatoes, and enjoy every last bite!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Not recommended for freezing due to cream sauce.
