A quick and elegant chicken dish with a rich cream sauce, sun-dried tomatoes, and herbs.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried Italian herbs
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach (optional)
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions

  1. Season chicken breasts generously with salt and pepper on both sides.
  2. Set your Instant Pot to sauté mode and add olive oil. Once hot, carefully place the chicken in the pot and brown each side for about 3-4 minutes until golden.
  3. Remove the chicken from the pot and place it on a plate.
  4. Toss in the minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in the chicken broth to deglaze the pot, using a spatula to scrape up any browned bits.
  6. Return the chicken to the pot.
  7. Mix the heavy cream, dried Italian herbs, and chopped sun-dried tomatoes in a bowl. Pour this mixture over the chicken.
  8. Close the lid and switch the Instant Pot to Manual mode, cooking for 8 minutes.
  9. Allow for a natural release for 5 minutes, then perform a quick release for any remaining pressure.
  10. If desired, stir in the fresh spinach until it’s just wilted.
  11. Serve topped with grated Parmesan cheese and fresh basil leaves.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on the stove over low heat or in the microwave.
