A romantic and creamy chicken dish with parmesan, sun-dried tomatoes, and fresh basil that is perfect for special occasions and weeknight dinners.

Ingredients

  • 3 large boneless skinless chicken breasts (sliced into thin cutlets)
  • Salt and black pepper
  • 6 tablespoons all-purpose flour for dredging
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan
  • Chili flakes to taste
  • A pinch of dried oregano
  • A pinch of dried thyme
  • 1/3 cup chopped sun-dried tomatoes
  • Fresh basil, chopped (for finishing)

Instructions

  1. Season both sides of the chicken cutlets with salt and black pepper.
  2. Dredge each cutlet in flour, shaking off any excess.
  3. Melt the olive oil and butter in a large skillet over medium heat.
  4. Cook the chicken in batches for 4–5 minutes per side, until golden and fully cooked. Set aside.
  5. Add minced garlic to the same pan and sauté for about 1 minute, until fragrant.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
  7. Reduce the heat and stir in the heavy cream and Parmesan cheese, simmering until the sauce thickens.
  8. Season the sauce with chili flakes, oregano, and thyme, then mix in the sun-dried tomatoes.
  9. Return the chicken to the pan and let it simmer for a few minutes to soak in the flavors.
  10. Finish with freshly chopped basil and serve hot over pasta or rice.

Notes

For a lighter sauce, substitute heavy cream with half-and-half or use roasted red peppers instead of sun-dried tomatoes.
