  • 3 boneless chicken breasts, sliced into 6 cutlets
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, finely minced
  • 1 bunch fresh basil, finely chopped
  • 1/4 cup sun-dried tomatoes, sliced
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 cup chicken stock
  • 2 cups heavy cream
  • 1 tsp red crushed pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Mix the Italian seasoning, paprika, garlic powder, and onion powder in a small bowl. Set this aside for later.
  2. Slice the chicken breasts into six thin cutlets to allow for quick cooking.
  3. Season both sides of the chicken with salt, pepper, olive oil, and the prepared spice blend.
  4. Heat olive oil in a large skillet and cook the chicken for about 2 minutes on each side or until golden brown. Once cooked, remove the chicken and drain excess grease.
  5. Add butter to the same skillet to scrape up any tasty browned bits from the bottom for extra flavor.
  6. Stir in the minced garlic and red crushed pepper; sauté until fragrant (around 20 seconds).
  7. Pour in the chicken stock, heavy cream, and parmesan cheese. Bring to a boil while stirring frequently.
  8. Let the sauce simmer for 5-10 minutes until it thickens up nicely.
  9. Season the sauce with salt and pepper, then fold in the chopped basil and sun-dried tomatoes.
  10. Return the chicken to the skillet, cover, and cook for another 3-5 minutes until fully cooked through.

Notes

For best results, reheat gently on the stove over low heat, adding a splash of cream to retain that creamy consistency. Don’t rush the sauce; allow it to simmer to deepen the flavors.
