  • 4 boneless, skinless chicken breasts (about 6 oz each, pounded to 1/2-inch thickness)
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 3/4 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes in oil (drained and chopped)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil (chopped, for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. In a shallow dish, combine the flour, garlic powder, salt, and pepper.
  2. Dredge each chicken breast in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
  3. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  4. When hot, add the chicken breasts in a single layer. Cook for 5-7 minutes on each side until they are golden brown and cooked through, reaching an internal temperature of 165°F. Remove the chicken and set aside.
  5. Lower the heat to medium and add the remaining tablespoon of butter to the skillet. Sauté the minced garlic for about 30-60 seconds until fragrant.
  6. Pour in the chicken broth, scraping the browned bits from the pan, and bring to a simmer.
  7. Stir in the heavy cream and the chopped sun-dried tomatoes, allowing the mixture to simmer for 3-4 minutes to thicken slightly.
  8. Mix in the grated Parmesan cheese until melted, resulting in a smooth sauce.
  9. Return the chicken to the skillet, covering it with the sauce, and let it simmer for an additional 1-2 minutes.
  10. Garnish with fresh basil and serve immediately.

Notes

Serve over rice or mashed potatoes to absorb the delicious sauce. A chilled glass of Chardonnay pairs nicely with this dish.
