  • 1½ teaspoons kosher salt
  • 2 tablespoons olive oil
  • ¼ cup all-purpose flour
  • 34 garlic cloves (minced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (freshly grated and divided)
  • 1 (7-ounce) jar sun-dried tomatoes (drained and chopped – about ½ cup)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ¼ cup basil leaves (thinly sliced)
  • Cooked pasta or mashed potatoes (for serving)

Instructions

  1. Season the chicken: Generously sprinkle both sides of the chicken breasts with kosher salt. Dredge each piece in flour, making sure to shake off any excess.
  2. Sear the chicken: In a large pan, heat olive oil over medium heat. Sear the chicken for about 4-5 minutes on each side until golden brown. Transfer the seared chicken to a plate and set aside.
  3. Sauté garlic: In the same pan, add the minced garlic. Sauté for about 30 seconds, just until fragrant.
  4. Add chicken broth: Pour the chicken broth into the pan, scraping up any browned bits from the bottom for extra flavor.
  5. Create the creamy sauce: Stir in the heavy cream, ¼ cup of grated Parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, black pepper, and red pepper flakes. Mix until combined.
  6. Simmer: Return the chicken to the pan. Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Cook until the chicken reaches an internal temperature of 165°F, about 5-8 minutes.
  7. Garnish and serve: Before serving, sprinkle with fresh basil and the remaining Parmesan. This dish pairs beautifully over cooked pasta or creamy mashed potatoes.

Notes

Feel free to swap out chicken for tofu or another protein for a meatless version, and adjust the seasoning to suit your taste.
