A deliciously creamy dish featuring tender chicken in a rich sauce made from sun-dried tomatoes, garlic, and Parmesan, perfect for special occasions or weeknight dinners.

  • 4 chicken breasts, boneless and skinless
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh basil for garnish (optional)

Instructions

  1. Start by heating olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Once the oil is hot, add the chicken to the skillet and cook until golden brown on both sides, about 4-5 minutes per side.
  3. Remove the chicken from the skillet and set it aside on a plate.
  4. In the same skillet, add minced garlic and sauté for about a minute until fragrant.
  5. Add in the chopped sun-dried tomatoes, chicken broth, and heavy cream. Stir well to combine all the ingredients.
  6. Bring the mixture to a gentle simmer. Once simmering, stir in the Parmesan cheese and Italian seasoning.
  7. Return the chicken to the skillet, letting it simmer for an additional 5-7 minutes until cooked through.
  8. Serve hot, garnished with fresh basil if desired.

Notes

For lighter options, substitute half-and-half for some of the heavy cream. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days.
