A creamy, flavorful chicken dish with sun-dried tomatoes and spinach, perfect for impressing guests or enjoying a cozy night in.

Ingredients

  • 4 chicken breasts
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  3. Place the chicken in the skillet and cook for 7-8 minutes on each side, until browned and cooked through. Remove the chicken and set aside.
  4. Add minced garlic to the skillet and sauté for one minute.
  5. Stir in the chopped sun-dried tomatoes and spinach, cooking until the spinach wilts.
  6. Pour in the heavy cream and mix in the grated Parmesan cheese, stirring until thickened.
  7. Return the chicken to the skillet, coating well with the sauce.
  8. Serve warm over a bed of pasta or rice.

Notes

For a spicy twist, add red pepper flakes when sautéing garlic. Leftovers can be stored in an airtight container for up to 3 days.
