A delightful chicken dish featuring creamy sun-dried tomatoes and gooey cheese, perfect for impressing loved ones or satisfying cravings.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium heat. Sear the chicken breasts for about 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add heavy cream, sun-dried tomatoes, and spinach. Stir to combine and let simmer for a few minutes.
  6. Add the chicken back into the skillet, and top with shredded mozzarella and grated Parmesan cheese.
  7. Transfer the skillet to the oven. Bake for about 20-25 minutes or until the chicken is cooked through and the cheese is bubbly.
  8. Garnish with fresh basil before serving.

Notes

For a dairy-free version, substitute coconut cream. Marinating the chicken for a few hours can enhance the flavor.
