An impressive lasagna that combines heartwarming flavors of comfort food with a pinch of romance, perfect for weeknight dinners.

  • 9 sheets Pasta Sheets
  • 3 cups Cooked Chicken (Rotisserie chicken)
  • 2 cups Ricotta Cheese
  • 1 cup Mascarpone Cheese
  • 1 cup Sun-Dried Tomatoes
  • 2 cups Spinach
  • 4 cloves Garlic
  • 2 teaspoons Italian Seasoning
  • 2 cups Mozzarella Cheese
  • 1 cup Parmesan Cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the minced garlic until it’s fragrant—about 1 minute.
  3. Add the spinach and sun-dried tomatoes to the skillet, cooking until the spinach wilts. Set this mixture aside.
  4. In a mixing bowl, combine the ricotta cheese, mascarpone cheese, Italian seasoning, and cooked chicken. Stir until everything is well blended.
  5. In a baking dish, layer three pasta sheets on the bottom. Add half of the chicken mixture, followed by half of the spinach mixture. Sprinkle with mozzarella and a bit of Parmesan.
  6. Repeat the layering process with the remaining pasta sheets, chicken mixture, and spinach. Finish with a final layer of pasta topped with mozzarella and Parmesan.
  7. Cover the dish with foil and bake for 25 minutes.
  8. After that, remove the foil and bake for an additional 15 minutes, or until golden and bubbly.
  9. Allow it to cool slightly before serving, letting the flavors settle.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. Reheat in the oven at 350°F (175°C) for about 20 minutes.
