A creamy and flavorful pasta dish with tender chicken, sun-dried tomatoes, and a luscious sauce that’s perfect for a date night or a cozy weeknight dinner.

Ingredients

  • 1 pound Chicken Breasts (cut into bite-sized pieces)
  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter
  • 4 cloves Garlic (finely minced)
  • 1/2 cup Sun-Dried Tomatoes (drained)
  • 1 teaspoon Red Pepper Flakes (to taste)
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese (freshly grated)
  • 8 ounces Pasta of Choice (penne, fettuccine, or rigatoni)
  • to taste Salt
  • to taste Black Pepper

Instructions

  1. In a large skillet over medium heat, warm the olive oil and butter until melted.
  2. Add the chicken pieces to the skillet. Season with salt and black pepper, cooking until golden brown—about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic, sun-dried tomatoes, and red pepper flakes. Sauté for 1-2 minutes until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese until the mixture is smooth.
  5. Return the chicken to the skillet along with the cooked pasta. Toss everything together and adjust seasoning with additional salt and pepper, if needed.
  6. Garnish with extra Parmesan or fresh herbs and enjoy warm.

Notes

Feel free to substitute chicken with shrimp or tofu for a different protein or swap the cream for a vegan alternative if desired.
