  • 2 chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Season the chicken breasts with salt and pepper, then cook until browned and cooked through, about 6-7 minutes per side. Once done, remove the chicken and set aside.
  3. In the same skillet, add minced garlic. Sauté for 1-2 minutes until fragrant.
  4. Pour in the chicken broth, heavy cream, sun-dried tomatoes, and Italian seasoning. Bring the mixture to a simmer.
  5. Add spinach and cook until wilted.
  6. Return the cooked chicken to the skillet, letting everything simmer together for an additional 5 minutes.
  7. Stir in the cooked pasta and grated Parmesan cheese until well-combined and creamy.
