  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach or kale
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Start by boiling salted water in a large pot for the fettuccine. Cook the pasta according to package directions until al dente.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes per side until golden brown.
  4. Stir in the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the heavy cream and sprinkle the grated Parmesan cheese on top. Stir until melted and smooth, then mix in the Italian seasoning.
  6. Fold in the fresh spinach or kale until it wilts.
  7. Drain the cooked fettuccine and add it directly to the skillet. Toss everything well to ensure every noodle is coated in the creamy sauce.

Serve with extra Parmesan or a drizzle of olive oil. Pairs well with a crisp side salad.
