A deliciously creamy pasta dish featuring tender chicken, sun-dried tomatoes, and Parmesan sauce, perfect for weeknight dinners or special occasions.

Ingredients

  • 8 oz pasta
  • 2 chicken breasts
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup Parmesan cheese
  • 3 cloves garlic
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning

Instructions

  1. Cook the pasta according to the package instructions. Once done, drain and set it aside.
  2. Heat olive oil in a large pan over medium heat.
  3. Season the chicken breast with salt, pepper, and Italian seasoning. Add it to the pan, cooking for about 6-7 minutes on each side, or until browned and cooked through. Remove the chicken and set it aside.
  4. Add minced garlic to the same pan and sauté for 1-2 minutes, until fragrant.
  5. Stir in the sun-dried tomatoes and heavy cream, and bring the mixture to a gentle simmer.
  6. Mix in the Parmesan cheese, stirring until it melts and the sauce thickens.
  7. Return the chicken to the pan, then add the cooked pasta, tossing everything together until well combined.
  8. Serve warm, garnished with additional Parmesan and fresh herbs if desired.

Notes

For best results, marinate the chicken for a few hours before cooking. Pair with garlic bread and a salad for a complete meal.
