A delightful blend of creamy sauce, tender chicken, and rich pasta that impresses anyone at your dinner table.

Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.75 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon red pepper flakes
  • 12 ounces pasta (penne or rigatoni)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a skillet over medium-high heat, heat the olive oil. Sear the chicken until golden brown and cooked through, about 5-7 minutes per side. Once done, remove from the pan and set aside.
  3. In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds.
  4. Add the chopped sun-dried tomatoes and cook for about 2 minutes, until they soften.
  5. Pour in the chicken broth to deglaze the pan, scraping up any browned bits for added flavor.
  6. Stir in the heavy cream, grated Parmesan, Italian seasoning, and red pepper flakes. Allow the sauce to simmer until slightly thickened, about 5 minutes.
  7. Cook the pasta in a pot of salted boiling water until al dente, reserving 0.5 cup of pasta water before draining.
  8. Slice the cooked chicken and return it to the skillet with the creamy sauce.
  9. Add the drained pasta and toss to coat well. If needed, adjust the sauce consistency with reserved pasta water.
  10. Taste and adjust seasoning with more salt and pepper as desired. Serve warm, topped with additional Parmesan and a sprinkle of red pepper flakes if you’re feeling spicy.

Notes

For a beautiful presentation, plate in shallow bowls and pair with a green salad or garlic bread. A chilled glass of Sauvignon Blanc complements the dish perfectly.
