A creamy and irresistible pasta dish filled with tender chicken, sun-dried tomatoes, and rich Parmesan, perfect for romantic dinners or weeknight family meals.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 ounces fettuccine
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • Salt and black pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions until al dente; drain and set aside.
  2. Combine olive oil and butter in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper. Sear them for about 5–7 minutes per side until golden brown. Remove the chicken and set aside.
  3. Sauté the chopped onion and minced garlic in the same skillet for 2–3 minutes until softened.
  4. Deglaze the pan with a splash of white wine if desired, scraping up the flavorful bits stuck to the bottom. Add the chicken broth and heavy cream, stirring until well combined.
  5. Mix in the sun-dried tomatoes. Let it simmer until the sauce thickens slightly, around 5–7 minutes.
  6. Stir in the grated Parmesan cheese until melted into a creamy sauce.
  7. Slice the cooked chicken and return it to the skillet, then toss everything together with the cooked fettuccine until well-coated.
  8. Add a handful of fresh spinach and a squeeze of lemon juice, allowing the spinach to wilt for freshness.
  9. Serve garnished with fresh basil leaves and extra Parmesan cheese.

Notes

For a lighter twist, substitute chicken broth for vegetable broth. Use whole wheat pasta for added fiber.
