A creamy, cheesy pasta dish with tender chicken and sun-dried tomatoes that brings people together.

  • 8 oz gluten-free pasta
  • 2 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Begin by cooking the gluten-free pasta based on the package instructions. Once done, drain and set aside.
  2. In a large skillet, heat a splash of olive oil over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook them for 6 to 7 minutes per side until they’re golden brown and fully cooked. Remove the chicken and let it rest.
  3. Using the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1 to 2 minutes until they’re fragrant.
  4. Pour in the heavy cream, bringing it to a gentle simmer. Stir in the mozzarella and Parmesan cheese until everything melts into a creamy potion.
  5. Slice the cooked chicken and return it to the skillet, mixing well.
  6. Toss the cooked pasta into the skillet, ensuring it’s fully coated with the rich sauce. Adjust seasoning as necessary with salt and pepper.
  7. Serve immediately, topped with extra Parmesan cheese or fresh basil for an added touch.

Notes

For added flavor, marinate the chicken in Italian dressing before cooking. Add spinach or bell peppers for extra nutrition.
