A romantic dish with tender chicken, sun-dried tomatoes, and creamy Parmesan sauce, perfect for cozy gatherings or date nights.

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 1 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Olive oil for cooking

Instructions

  1. Boil a large pot of salted water. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Warm some olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper. Cook for about 5-7 minutes on each side, until fully cooked. Remove from heat and let them rest.
  3. Add minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for 2-3 minutes until fragrant.
  4. Pour in the heavy cream, bringing it to a gentle simmer. Stir in grated Parmesan cheese and Italian herbs, allowing the sauce to become smooth and creamy.
  5. Slice the rested chicken and add it back to the skillet, along with the cooked pasta. Toss until everything is beautifully coated in the sauce.
  6. Plate the pasta and chicken while hot, garnishing with fresh basil.

Notes

For a lighter version, swap the heavy cream for half-and-half, or use gluten-free pasta.
