A creamy and flavorful pasta dish combining tender chicken, rich parmesan, and zesty sun-dried tomatoes, perfect for date nights.

Ingredients

  • 2 chicken breasts
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1/2 cup sun-dried tomatoes, chopped
  • 8 oz pasta (e.g., fettuccine or penne)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown, about 5-7 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds.
  5. Add the chopped sun-dried tomatoes and cook for 2 minutes.
  6. Pour in the heavy cream and stir. Allow the mixture to simmer slightly.
  7. Stir in the grated parmesan cheese, mixing until melted and smooth.
  8. Slice the cooked chicken and return it to the skillet with the cooked pasta. Toss gently to coat everything.
  9. Serve hot, garnished with fresh basil.

Notes

For a lighter version, substitute half of the heavy cream with low-fat milk. Use fresh cherry tomatoes instead of sun-dried tomatoes for a fresher taste.
