  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes, optional
  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish

Instructions

  1. Begin by cooking the pasta according to the package instructions until al dente. Once cooked, drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil. Season the thinly sliced chicken with salt and pepper.
  3. Sear the chicken in the skillet for about 3 to 4 minutes on each side until it’s nicely browned. Remove the chicken and set aside.
  4. In the same skillet, add the minced garlic and chopped sun-dried tomatoes.
  5. Cook for 1-2 minutes, stirring frequently until the mixture becomes fragrant.
  6. Pour in the chicken broth and allow the mixture to come to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Stir in the heavy cream, Parmesan cheese, and Italian seasoning. If desired, add in the crushed red pepper flakes.
  8. Return the seared chicken to the skillet and gently fold in the cooked pasta until everything is thoroughly combined and heated through.
  9. Remove from heat, garnish with torn fresh basil and an additional sprinkle of Parmesan before serving warm.

Notes

For a healthier twist, use whole wheat pasta or swap heavy cream with half-and-half. Pair with a light garden salad and a refreshing white wine.
