A delightful and creamy pasta dish that encapsulates comfort and romance, featuring chicken, sun-dried tomatoes, and Parmesan cheese.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • 1 cup low-sodium chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by preparing your ingredients. Chop the garlic and sun-dried tomatoes so everything is ready to go.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Season both sides of the chicken breasts with salt and pepper. Sauté for about 6-7 minutes on each side until they achieve a golden-brown hue. Once done, remove the chicken from the pan and set aside.
  4. In the same skillet, add the minced garlic and sauté for 1 minute until it’s wonderfully fragrant.
  5. Stir in the chicken broth and heavy cream, allowing the mixture to gently simmer.
  6. Toss in the chopped sun-dried tomatoes along with the grated Parmesan cheese. Stir until the cheese melts and the sauce becomes beautifully combined.
  7. Return the cooked chicken to the skillet. Add in your already cooked pasta and toss everything together until the noodles are thoroughly coated in that creamy goodness.
  8. Serve immediately, garnished with fresh basil or extra Parmesan if desired for an added touch of elegance.

Notes

Feel free to swap out fettuccine for penne or use a lower-fat cream substitute. For added flavor, consider mixing in spinach or mushrooms.
