  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • 8 ounces of penne pasta
  • Fresh basil, for garnish

Instructions

  1. Gather all the ingredients. Chop the sun-dried tomatoes and mince the garlic.
  2. Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package directions until al dente. Drain and set aside.
  3. Season Chicken: Sprinkle salt and black pepper on both sides of the chicken breasts.
  4. Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
  5. Brown Chicken: Add the chicken breasts to the skillet. Cook for about 6-7 minutes per side, until fully cooked and golden brown. Remove from the skillet and let rest.
  6. Sauté Garlic: In the same skillet, add the minced garlic. Sauté for about 1 minute until fragrant.
  7. Add Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another minute.
  8. Make the Sauce: Pour in the heavy cream, chicken broth, and Italian seasoning. Stir well and bring to a simmer.
  9. Incorporate Cheese: Add the grated Parmesan cheese, stirring until melted and the sauce is smooth.
  10. Combine Pasta: Toss the cooked pasta in the skillet, ensuring it’s well-coated with the sauce.
  11. Slice Chicken: Slice the cooked chicken breasts and arrange them on top of the pasta.
  12. Garnish and Serve: Finish with a sprinkle of fresh basil and more Parmesan cheese, if desired.
