  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 2 tsp dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat a large skillet over medium heat.
  2. Season the chicken breasts generously with salt and pepper.
  3. Sear the chicken in the skillet for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  5. Stir in the halved cherry tomatoes, heavy cream, chicken broth, and dried Italian herbs. Mix well.
  6. Bring the mixture to a gentle simmer.
  7. Return the chicken to the skillet and sprinkle parmesan cheese over the top.
  8. Cook for another 10-15 minutes until the chicken is fully cooked and the sauce has thickened.
  9. Serve garnished with fresh basil.

Notes

For an extra flavor boost, consider marinating the chicken in a bit of lemon juice and herbs before cooking.
