  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 tsp Italian seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
  2. Generously season the chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about one minute.
  4. Sear the chicken breasts in the skillet, cooking for around five minutes on each side until they’re golden brown.
  5. Pour in the low-sodium chicken broth and heavy cream, scraping any brown bits from the skillet to enhance the flavor.
  6. Stir in the Italian seasoning and grated Parmesan cheese, mixing until everything comes together smoothly.
  7. Fold in the fresh spinach and let it wilt for about two minutes.
  8. Transfer the mixture to your prepared baking dish and bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Notes

This dish pairs well with garlic bread and a simple side salad. For an elevated flavor, add fresh herbs like basil or thyme.
